A good chef’s knife should do two things well; hold a sharp edge and feel great in your hand. With that simple recipe (and many months of testing), we created the Misen Chef’s Knife. An incredible knife at an honest price.

We use AICHI AUS-8 steel, which offers a great balance of sharp edge retention and durability, with 60% higher carbon content than other “premium” knives.

HYBRID BLADE GEOMETRY

Our Chef’s Knife incorporates features from both Western and Japanese-style knives for a versatile blade that supports multiple cutting techniques, be it a rock, slice or chop.

Sloped Bolster

Our knife incorporates a sloped bolster that travels gradually onto the blade face, providing an incredibly comfortable hold for every hand, and encouraging a proper “pinch grip” for better control.

15° Blade Angles

While most Western-style Chef's Knives have edge angles of 25 degrees, we use more acute 15 degree angles for a noticeably sharper cutting face.
