The Santoku knife is similar to a classic chef’s knife in its utility, while being slightly shorter and lighter. Its smaller size makes it a favorite among new cooks or those who prefer chopping or slicing cuts.

Inspired by the classic Japanese design, this knife has a thinner blade and flat cutting edge, making it ideal for cutting vegetables, fish, and meat.

The Santoku Knife is made with AICHI AUS-10 steel, which offers an even better balance between lasting sharpness and durability with 2x the carbon content of some other “premium” knives.

Unique Sloped Bolster

Our unique sloped bolster pulls double duty: the sloped shape encourages a proper “pinch grip” for comfort and control, while the bolster’s placement creates better access to the full length of the blade.

15° Blade Angles

While most Western-style knives have edge angles of 25 degrees, we use more acute 15 degree angles for a noticeably sharper cutting face.

Amazing knife

Super love my santouka knife....feels like I'm slicing on butter every single time...

My only complaint is since it's too sharp I need to be extra careful when I'm cutting something 🙃

My Santuco Knife

I bought the knife to replace the same kind of knife I bought several years ago. It was ok but the Misen is great. I have NEVER had such a sharp knife. Thank you.

Great knife!!

I read the reviews with some skepticism but finally bought the knife. It's eclipsed the rest of our magnetic hanger.... works equally as chef's or paring knife. The THIN BLADE has great BALANCE, is SHARP, SHARP, SHARP, and it looks good too. Balance, edge and heft are outstanding. Great work, Misen. Now I suppose I'll probably buy another later.....

Great knife for the money

I bought the original chef's knife and really liked it. I prefer a broader blade so I bought the Santoku as well. It's just as good as my Shun which costs many times as much.

Gorgeous knife.
