Our unique sloped bolster pulls double duty: the sloped shape encourages a proper “pinch grip” for comfort and control, while the bolster’s placement creates better access to the full length of the blade.

15° BLADE ANGLES

While most Western-style knives have edge angles of 25 degrees, we use more acute 15 degree angles for a noticeably sharper cutting face.

Paring knife

I am pleased with my purchase. My inclination is to buy the chef's knife but I am already set with a couple of chef knives. I also have an off set serrated bread knife. The weight and balance is perfect for my hand and makes for pleasant meal prep. I'm interested to see how the edge keeps.

Liked it so much I bought another!

I am extremely particular about my knives and have great German and Japanese knives that I have used for years. Nevertheless when I needed a new paring knife I decided to buy a Misen. The knife more than lived up to my expectations. However, the experience of purchasing the knife online was superb. Shipping was not only quick, but the notifications were appropriate and not intrusive. The package was very impressive and rivaled that of far more expensive knives. My only regret is that the company doesn’t offer a fillet or boning knife. As one who has studied Japanese swords, I can say it is indeed nearly as sharp as a katana!

A month's experience

My new paring knife came well packaged and perfectly sharp. As with my other better quality knives, my greatest difficulty is getting other household members to care for it properly. It works well. Well balanced, and well shaped for big paring jobs.
