A good Chef’s Knife is the single most important tool in any kitchen.

From mincing garlic to breaking down meats, it’s the workhorse behind virtually every great dish. More than that, a quality knife allows you to be more creative & versatile in the kitchen, and helps produce better quality food.

But between confusing, unexplained features and needlessly expensive price tags, finding the perfect blade can be difficult. That didn’t seem right to us, so we decided to make something different:

What makes our knife great?

Choosing the right steel is a balancing act between toughness and edge holding.

With a Rockwell Hardness rating of 58-59 and 60% higher carbon content than other mainstream “premium” knife brands, AUS-8 offers a great balance of sharp edge retention and durability.

Our knife is made with AUS-8, a Japanese high carbon stainless steel with a great balance of edge retention and durability.

15 Degree Blade Angle

In general, the smaller the blade angles, the sharper the knife. While most Western-style Chef's Knives have edge angles of 25 degrees, we use more acute 15 degree angles for a noticeably sharper cutting face.

Our knife also has a 50/50 symmetrical grind that is suitable for both right and left-handed users.

While bolsters aren't strictly necessary, our knife incorporates a sloped bolster that travels gradually onto the blade face, providing an incredibly comfortable hold for every hand.

Just as importantly, it encourages a proper “pinch grip” which provides more control.
